Description

Sage Derby is a vegetarian cheese made from cow's milk. In the seventeenth century, the custom of adding sage (an herb valued at the time for it's health-giving properties) to Derby Cheese was begun. These days, the cheese consists of reconstituted cheese blended with spinach juice or green vegetable dye and colorless dried sage.
